Refreshing summer salads with seasonal veggies and herbs


It’s peak summertime in Speedway, which means all of the best flavors like mint, basil, lemongrass, cucumbers, tomatoes, strawberries, and peaches can be found in abundance at farm markets and grocery stores around Indianapolis. A subtle oniony flavor from the chive flowers makes this salad truly unique– and pretty, too! Chives usually bloom in early summer, so if you can’t get your hands on the blossoms, the green chive stalks can be used to add flavor as well.

People seem to either love or hate cilantro, so if you’re among the latter, you can leave it out of this recipe and the other flavors will more than cover for it. A simple lime vinaigrette dressing adds tangy flavor, and the chili powder and garlic give it a nice kick.


Fresh Peach Salad

Here is your quintessential summer salad packed with peaches, crumbled cheese, and toasted almonds. And the red onion and balsamic vinaigrette provides the perfect balance of sweet and savory flavors.
